In memory of Grandpa J. Charles ("Jack") Pelon
Though it is really Grandma's recipe, these cookies elicit strong memories of my childhood--
during which Grandpa taught many important life lessons to my brother and to me.
"Patience is a virtue" was one of those lessons, so this is a fitting recipe with which to
remember Grandpa, since it involves both patience and planning.
2 egg whites, at room temperature
⅔ c. sugar
optional: semi-sweet chocolate chips
(Make these cookies in the evening, before going to bed.)
Before starting to mix cookies, preheat oven to 375°F.
Cover a cookie sheet with aluminum foil and very lightly spray with cooking oil. Beat egg whites until they form stiff peaks. Add sugar gradually to egg whites and beat until very stiff and shiny. Add chocolate chips, if desired, and drop mixture by teaspoons-full onto cookie sheet. Put cookie sheet in oven, close oven door and TURN OVEN OFF. Leave pan of cookies in oven overnight.
Makes about 30 meringue drops.
